Delicious Dal

I got this recipe from a friend. She made this and it was so scrumptious. You must give this meal a shot.

Ingredients:

  • 1 bag lentils

  • ** Serve with rice & Spinach

  • 1 or 2 cans of coconut milk

  • red, yellow or orange peppers ( 3/4 cup)

  • 3/4 cup onions chopped

  • 2 TBSP chopped garlic

  • 1 TBSP cumin

  • 2 TBSP coriander

  • 1 TBSP turmeric

  • Pepper, salt and cayenne to taste!

Directions:

  1. Put a pot on the stove and heat up some fat to saute the onions and garlic. You can use what you like… I prefer to use a bit of coconut oil. Then place:

    1. Onions, letting them fry for a bit

    2. Then add the garlic for about 30 seconds

    3. Then add the peppers.

    4. Add the spices

    5. Then add the coconut milk and lentils

  2. Now let it simmer for about 45 minutes to 1 hour. Add water or more coconut milk as needed.

  3. Chop the spinach and place in a bowl for people to sprinkle over their own dishes.

  4. Now plate rice and scoop the Dal over the rice. Sprinkle the fresh spinach over the top add lime if you wish and dig in!
